  • salt
  • pepper
  • garlic powder
  • oil for frying
  1. Place oil in large heavy skillet and heat.
  2. Place corn starch, salt, pepper and garlic powder in a pie plate or zip close bag, mix well.
  3. Roll chicken pieces in mixture and coat well, gently place in hot oil, fry on both sides until golden brown, then place lid on skillet and let cook for 5 additional minutes.
  4. Enjoy!
Pasta Salad

( I like to think as a recipe or a box mix is just a starting point- it is up to use to make these things memorable)

  • 1 box pasta salad mix
  • 1/4 cup Italian dressing
  • 1 can black olives, drained
  • 1/4 cup grated cheese
  • 2 tablespoons Parmesan cheese
  • salt and pepper to taste
  1. Prepare noodles as directed, when done, rinse with cold water until cool, drain
  2. place in a large bowl, add all ingredients (plus the seasoning packet that came with pasta mix)except salt and pepper, mix well
  3. season with salt and pepper to taste.
Note: The box directions called for salad dressing and I didn't want a heavy salad, so I added these items instead
